This hojicha is a grilled organic green then ground. The roasting stage changes the taste of green tea and gives it a wonderful grilled flavor that can make coffee or cocoa think.
This tea comes from the ribs and stems of the tea tree that were put aside during the production of Matcha and other teas. He was born around 1920, in Japan, in an idea of "zero waste".
In addition, in Kyoto, he quickly became a way to attract customers to tea shops, thanks to the incredible odor released by the roasting of tea.
The roasting process retains vitamins and antioxidants of tea but eliminates its tannins, which are responsible for the bitterness of certain teas.

In the spring, in Nishio (Japan 🇯🇵), our farmers harvested the youngest leaves in their tea trees. They were able to really choose the leaves richest in antioxidants, those that do not contain bitterness. The leaves were then steamed for a few seconds to freeze their properties.
Later, to avoid any bitterness and keep only the tender heart of each leaf, the most rich part in benefits, the main ribs of the leaves were, by hand, carefully removed. This goldsmith's work makes this matcha a product with incomparable quality.
Finally, after being carefully dried, the leaves were ground between two granite grinding wheels, to finally obtain a 100 % natural powder, very rich in flavors, and without any bitterness.
